Ingredients:

  • 1 cup (195g) Lily’s no sugar added semi-sweet chocolate chips
  • 1/2 cup unsalted butter
  • 1/3 cup truvia sweet complete
  • 2 packets stevia extract powder
  • 3 large eggs
  • 1/4 cup unsweetened cocoa powder, dutched
  • 4 Atkins Endulge Peanut Butter Cups

Directions:

  • Preheat oven to 350°F. Prepare an 8-inch by 8-inch baking pan with parchment paper and grease with cooking spray.
  • In a medium heat-resistant bowl, place the chocolate chips and butter. Microwave in 30 second increments, stirring thoroughly between, until chocolate chips and butter are melted, 1 ½ to 2 minutes total. Whisk in the sweeteners until dissolved. Add eggs one at a time, whisking between until smooth and silky.
  • Scrape the batter into the prepared baking pan, smoothing it out to evenly fill the pan. Chop Atkins Endulge Peanut Butter Cups and scatter evenly over the top of the brownie batter. Bake until a toothpick inserted into the middle comes out clean, 25-30 minutes.
  • Let cool for at least 15 minutes before cutting into 9 equal squares. One square is one serving.
